New Thing 216, New Thing Every Day: Try Head Cheese


Really, how can you go your whole life and not want to try head cheese, desperately? Well, for me, today was the day. Over the weekend, we went to the new artisinal butcher shop at Barred Owl and go several very cool items. The coolest, of course, was headcheese. From Wikipedia, "Head cheese or brawn is a cold cut that originated in Europe. A version pickled with vinegar is known as souse. Head cheese is not a dairy cheese, but a terrine or meat jelly made with flesh from the head of a calf or pig, or less commonly a sheep or cow, and often set in aspic."

Tonight, as a snack, I trued a slice of head cheese with a little dijon mustard, a common accompaniment. Honestly? Two bites was enough.

New Thing 215, New Thing Every Day: Invent a Meatloaf Recipe That Fits With What I Eat Now


After eating turkey meatloaf every few weeks for many years -- Leigh makes awesome meatloaf -- we have not had it in a few months because it has bread crumbs and we do not eat bread anymore. Tonight, we decided to find another recipe, and I decided to invent one, instead. I did, and then made it, and it was absolutely delicious. We will definitely go back to having meatloaf more often again.

Here is the recipe:
3/4 ground turkey
1/4 salsiccia
3 tbsp. paleo flour (with almod flour, etc.)
1/2 cup diced tomatoes
garlic salt
dash of red pepper flakes

Homemade BBQ Sauce:
3 parts Organic ketchup
1 part Sriracha
3 parts pomegranate balsamic vinnagrette
dash of agave nectar

We accompanied the meatloaf with a delicious cauliflower puree.

New Thing 214, New Thing Every Day: Visit Rock Bridge State Park

Nope, never been there. I have been in Columbia for 20 or so of the last 29 years, and somehow I have never managed to make it to Rock Bridge State Park. Leigh and I went over today so I could see what I could see. It is not very accessible, so I have blown my chance to see the grand sights of the park, but I have done my best. Check another New Thing off the list.

New Thing 213, New Thing Every Day: Get a Reiki Treatment

I have known about Reiki for for many years, but have never tried it. Do you know what Reiki is? According to Google, it is "a healing technique based on the principle that the therapist can channel energy into the patient by means of touch, to activate the natural healing processes of the patient's body and restore physical and emotional well-being."

In Columbia, we have several Reiki practitioners, and I went to Tawnee Benner. Honestly, I am not yet sure of the effect, but Tawnee seemed excellent and I would absolutely recommend her for someone who wants an great Reiki treatment.

New Thing 212, New Thing Every Day: Choose Someone at Random and Do Something Nice for Him/Her

The first thing to know is that I keep my entire personal rolodex in a database -- a list of basically everyone I know, everyone I have met in the last 25 years or so. To make this New Thing work, I exported a list of everyone I know in Columbia. Then, I opened it in Excel, which automatically assigns a number to each record. To randomly choose someone I know, I went to www.random.org, which has a random number generator.

I ended up with the name of a person I like very much and have not talked to in at least two years. Tomorrow, I will do something nice for him.

New Thing 211, New Thing Every Day: Meet a United Flight to Columbia


As a chamber ambassador, I could pretty easily knock out a lot of my New Things by just counting all of the ribbon cuttings for new businesses I go to, but that would be pretty lame. A few, though, really should count, and today was one of them. Columbia Regional Airport has added United Airlines to the flights that come in and out of Columbia, and the ambassadors met the very first plane today, cutting a ribbon for it, of course.

New Thing 210, New Thing Every Day: Register for an MBA Program

Well, I have officially registered for my first actual MBA class. Yes, I have been taking classes for maybe a year, but those were all just the prerequisites. Now, I am through with all of those and as of about 15 minutes ago I have officially enrolled as an MBA student and have scheduled my first class. That first one will be Business 528, International Business. I am really looking forward to it, and eventually to getting my MBA, sometime in 2019.
