Well, so I am doing this diet that includes total abstention from dairy, so Leigh tried buying this fake cheese made from almonds. Earlier in the afternoon, I tried a forkful, and it was fine, but nothing I really cared to ever try again.Then, before dinner, tried it with some raw baby carrots, and it was pretty tasty. I suspect I will grow to like it very much, and it will become a regular thing I eat.
I have a mild allergy to dairy (that adds up if I cheat too much), and have been off of it for a couple of years now. Flax milk is my favorite replacement. It's great in homemade nondairy ice cream (I use Cuisinart's recipe). Bob, an avowed nondairy skeptic, swears I could sell it at the Farmer's Market! I'm also allergic to coconut and nuts, but those are great milks. Coconut cream is super thick and creamy too. Good luck on this! It's hard but worth it, at least it has been for me. I'm allergic to soy, dairy, nuts, shellfish and coconut (all adult onset). I take joy in what I can eat now, and new things that I have found.
